Recipe Summary
This is a quick and easy taco meat. It is great on a taco but also taco salads or cauliflower "rice" taco bowls, to up the nutrition and keep points low. Enjoy!
Ingredients
- One cooked rotisserie chicken
- one link of chorizo (5 inches long)
- one tsp of cumin
- one tsp of chipotle powder (optional)
- one tsp of chilli powder
Cooking Directions
- Remove white breast meat for rotisserie chicken and shred with a fork. (I save the remaining legs and white/dark meat for a separate meal)
- Remove chorizo from tube and add to a 10 inch skillet.
- Cook chorizo over medium heat for approximately 10 minutes until fully cooked and broken in to tiny pieces.
- Add chicken and seasonings to the chorizo in the skillet and stir together.
- Stir in a half cup of water or chicken broth. You can also use the extra juice from the rotisserie chicken.
- Simmer over low heat for 5 - 10 minutes.
- Serve with taco ingredients or use for a taco salad (with salsa for dressing), or cauliflower taco "rice" bowl. Adjust points for added toppings (cheese, chips, etc...). Freezes well.
