10 minute Cauliflower Fried Rice

Recipe Summary

My new staple side because I can make it in 10 minutes, serve with any mail dish, and I only need to keep three ingredients on hand. It's delicious, filling, and healthy. I make a double batch and eat the left overs through-out the week. 

Ingredients

  • 1 bag of Frozen Cauliflower Rice (I used Green Giant. There are only veggies and no other added ingredients). 
  • 2 eggs
  • 1 tbsp of olive oil
  • 1 tsp of garlic powder
  • 1 tsp of onion powder
  • salt and pepper (I use a lot of pepper and very little salt, since soy sauce is higher in sodium, even lite.)
  • 2-4 dashes of lite soy sauce (see picture)

Cooking Directions

  1. Place bag of cauliflower in microwave and cook four minutes
  2. Heat pan and add oil.
  3. Beat eggs and add to pan. Sprinkle half seasonings over eggs and scramble them while cooking.
  4. Add cauliflower from bag and mix in well. 
  5. Stir in remaining seasoning and cook for a few minutes.
  6. Turn off heat and stir in soy sauce. 
  7. Enjoy!
