Microwave Baked Cinnamon Apples

Recipe Summary

If you like baked apples made with cinnamon hearts, this is a fast, 0 point alternative for one person.  Brachs cinnamon disks are 1 point for 3, so the 2 used in this recipe are 0-1 point.  With the right size baking dish, you could easily make these for 2 people.  

Ingredients

  • 1 apple
  • 2 cinnamon disks (Brachs, for instance)

Cooking Directions

  1. Cut the apple in half lengthwise.  Use a melon baller or grapefruit spoon or knife to remove the core and leave a hemispherical hole in each half.  Use a paring knife to make cuts through the apple flesh radiating out from the hole, but do not cut through the peel.  This will let the cinnamon permate the apple.  
  2. Place the apple halves cut-side-up in a microwave safe baking dish with a cover.  Place a cinnamon disk into each half and fill the hole the rest of the way with water.  
  3. Put the cover on the dish and microwave on high about 2 minutes or until the apple is of desired tenderness.  The cinnamon disk will mostly dissolve.
  4. Allow to cool for a few minutes and enjoy!

Serving size:  2 apple halves.  Serves 1.
