Recipe Summary

I like banana bread but a whole loaf can be a bit much. This way I can use up that last banana that has gotten a bit too ripe.

Ingredients

  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon [sometimes I use more]
  • 1/8 teaspoon salt
  • 1 banana, mashed
  • 2 Tablespoons sugar
  • 1 Tablespoon salted butter, melted [plus more for greasing ramekin]
  • 1 egg yolk
  • 1/2 teaspoon vanilla extract

Cooking Directions

  1. Heat oven to 350 degrees F (177 degrees C) and lightly grease a 10-ounce ramekin.
  2. In a medium-sized bowl, combine the flour, baking soda, cinnamon and salt together. Set aside.
  3. Mash the banana with a fork in a separate small bowl. Add the sugar and with an electric mixer or a wire whisk, whip the banana and sugar together.
  4. Add the melted butter, the egg yolk, and the vanilla; mix well.
  5. Mix in the dry ingredients just until incorporated.
  6. Pour the batter into baking dish
  7. Bake for 30 minutes, until golden brown.
  8. Remove from the oven and cool slightly before eating.

Serving Size / Serves

1 serving You can use 8/8.5/10 ounce size ramekin or 6/5 inch cast iron skillet
