Lemon Butter Broccoli

Recipe Summary

This is a quick and simple way to add veggies as a side to any meal. This especially pairs well with fish. I have made this for company and everyone always likes it. This recipe is great to get the kids to eat broccoli too! I often double this recipe, which then uses one full lemon.

Ingredients

  • 1 bunch broccoli (about 1½ pounds), cut into bite-sized pieces
  • 1 tablespoon unsalted butter
  • 2 teaspoons fresh lemon juice (approximately 1/2 lemon)
  • 1 teaspoon grated lemon zest (approximately 1 half of lemon zested)
  • ½ teaspoon salt
  • ⅛ teaspoon pepper

Cooking Directions

1. Bring a few inches of water to a boil in a pan with a steamer basket. Add the broccoli to the basket, cover and cook until crisp-tender, about 3 minutes.

2. Meanwhile, in a large skillet, melt the butter. Add the lemon juice and cook for 30-60 seconds. Stir in the lemon zest, salt and pepper, then add in the broccoli. Toss to coat. 

To speed up the cooking time this recipe may also be made using the microwave. I use a microsteamer to steam the broccoli. Then I melt the butter in a glass bowl in the microwave, add the lemon to the butter, and toss all over the steamed broccoli. Then I salt and pepper as needed.
