Oven Roasted Brussels Sprouts

Recipe Summary

Oven roasting vegetables brings out the sweetness. With brussel sprouts it gets rid of the bitter taste, and leaves a delicious, crunchy and roasty flavor. Brussel sprouts are loaded with vitamins K and C and and also a good source of essential minerals and antioxidants. You can feel good about getting a second helping of these! With the added fiber they are sure to keep you full too! 

Ingredients

  • 1 lb of brussel sprouts, washed, trimmed and halved
  • 2 TBSP of Extra Virgin Olive Oil (It is important you are using pure olive oil and not a blend when roasting. Some less expensive olive oils are a blend with corn oil and can burn at higher temperatures.)
  • Salt and pepper

Cooking Directions

  1. Set oven to 400 degrees.
  2. Place prepared brussel sprouts in a large bowl. Drizzle extra virgin olive oil over them and toss until they are evenly coated.
  3. Sprinkle salt and pepper over the brussel sprouts and toss.
  4. Lay out brussel sprouts on a sheet pan and place in the oven for approximately 30 minutes. If your oven is on convection this may go faster so adjust time accordingly.
  5. Brussel sprouts should be browned and crispy on the outside, and tender on the inside. If the brussel sprouts are bitter they have not been roasted long enough. 
  6. Enjoy for a snack or side with any meal.
