Slow cooker roasted vegetables

Recipe Summary

Quick and easy way to cook your veggies on busy days. This is low in carbs so you won't feel tired after eating them, but the loaded fiber will keep you full! Great side for any meal. 

Ingredients

  • 1 bag of baby carrots
  • 1 bag of cauliflower florets (fresh not frozen)
  • 1 bag of broccoli florets (fresh not frozen)
  • 3 TBSP of Balsamic Vinegar
  • Salt/Pepper
  • Optional: 1 tsp of garlic powder

 

Cooking Directions

  1. Use cooking spray on the bottom of the slow cooker or use a liner. 
  2. Layer vegetables with carrots at the bottom, cauliflower in the middle, and broccoli on top. 
  3. Mix balsamic vinegar with salt, pepper, and garlic powder. 
  4. Poor mixture over the vegetables.
  5. Set the slow cooker on low and cook for 4 -5 hours. 
  6. These vegetables make great left overs for meal prepping.
