Recipe Summary
So yummy and filling!!! I divided into 6 hearty servings.
Ingredients
- 99% Ground Turkey Breast (could use chicken breast also)
- 3 1/2 cups chicken broth (I used 3 tsp Better than Bouillon Chicken Base & 3 1/2 cups water)
- 1 can (14.5 oz) diced tomatoes
- 1 chopped yellow onion
- 3 medium carrots, sliced
- 2 celery ribs, sliced
- 3-5 cloves garlic, minced
- 1 tsp dried basil
- 2 tsp salt
- 1/2 tsp dried oregano
- 1 tsp cumin
- 1 tsp chili powder
- 2 cans (15 oz) black beans, rinsed and drained (I used low sodium beans)
- 1 packet (2 servings) Minute Rice & Quinoa, cooked
Cooking Directions
- Brown ground turkey breast until done.
- Transfer to slow cooker
- Add everything except for black beans and rice to crockpot.
- Cook on low for 6-7 hours.
- Add beans and cooked rice.
- Slow cook 1 more hour.
- Serve and Enjoy!!
