Bowl of Pasta soup

Recipe Summary

This soup is warm, comforting, and filling. Perfect lunch or dinner on cold, winter days. This is much lighter than eating a bowl of pasta but just as satisfying. Enjoy! 

Ingredients

  • One pound of extra lean ground turkey
  • 24 oz. of light pasta sauce (no sugar added)
  • 1 can (14 oz) of stewed or diced tomatoes
  • 2 boxes (32 oz) of low sodium chicken stock
  • 2 cups of medium shell noodles
  • 1 tbsp. of Italian seasoning
  • 1 tsp. of basil
  • 1 tsp. of sage
  • 1 tsp. of garlic powder
  • Salt and pepper to taste
  • Optional: top with freshly grated Parmesan cheese. Add one point per tablespoon. 

 

Cooking Directions

  1. In a large stock pot, brown meat over medium heat.
  2. While browning meat, add all seasonings and mix in the meat. 
  3. Once meat is fully cooked, add pasta sauce, tomatoes, and stock to the pot. Cover and bring to a boil. Stir as needed. 
  4. Once the soup boiling, stir in noodles. Cook covered over medium heat, stirring occasionally, until noodles are tender. 
  5. Top with parmesan cheese, if desired. 
  6. Eat slowly and savor.

Serving Size / Serves

The serving size is 2 cups. Serves approximately 12 servings.
