Recipe Summary
This soup is warm, comforting, and filling. Perfect lunch or dinner on cold, winter days. This is much lighter than eating a bowl of pasta but just as satisfying. Enjoy!
Ingredients
- One pound of extra lean ground turkey
- 24 oz. of light pasta sauce (no sugar added)
- 1 can (14 oz) of stewed or diced tomatoes
- 2 boxes (32 oz) of low sodium chicken stock
- 2 cups of medium shell noodles
- 1 tbsp. of Italian seasoning
- 1 tsp. of basil
- 1 tsp. of sage
- 1 tsp. of garlic powder
- Salt and pepper to taste
- Optional: top with freshly grated Parmesan cheese. Add one point per tablespoon.
Cooking Directions
- In a large stock pot, brown meat over medium heat.
- While browning meat, add all seasonings and mix in the meat.
- Once meat is fully cooked, add pasta sauce, tomatoes, and stock to the pot. Cover and bring to a boil. Stir as needed.
- Once the soup boiling, stir in noodles. Cook covered over medium heat, stirring occasionally, until noodles are tender.
- Top with parmesan cheese, if desired.
- Eat slowly and savor.

The serving size is 2 cups. Serves approximately 12 servings.
